Cheesecake Recipe ♥
Hey lovely people!
Wow another week has gone by - I literally can't keep up with the time at the moment!
Today I actually made a cheesecake in my Food Technology lesson and I thought because I hadn't posted in a week, I would post today and also seeing as I made it today, I would write a post on the method behind it because it is absolutely gorgeous and a simple recipe that you can adjust to suit your taste.

Ingredients you will need:
125g Digestive biscuits
75g butter (soft)
300g cream cheese
60g Icing sugar
1 tsp vanilla extract
1/2 tsp lemon juice
250ml double cream
*plus any other extra ingredients such as jam,chocolate etc.
Method
1. Blitz the biscuits in a food processor until beginning to turn to crumbs, and then add the butter melted on the hob, and whiz again to make the mixture clump.
2. Press the mixture into a 20cm spring form tin; press a little up the sides to form a slight ridge.
3. Beat together the cream cheese, icing sugar, vanilla extract and lemon juice in a bowl until smooth.
4. Lightly whip the double cream and then fold it into the cream cheese mixture.
5. Spoon the cheesecake filling on top of the biscuit base and smooth with a spatula. Put it in the fridge for 3 hours or overnight.
6. Serve the cheesecake!
